  • 3 g fine salt, approximately ½ teaspoon
  • 30 g fresh flat-leaf parsley, including tender stems
  • 150 g finely ground almond flour
  • 20 g sesame seeds, plus a little extra for the top
  • 4 g baking powder, approximately 1 teaspoon — recommended for a lighter loaf
  • 1 g freshly ground black pepper — optional

For the avocado spread

  • 1 medium ripe avocado, approximately 150 g flesh
  • 1 small fresh chilli, approximately 10 g
  • 20 g fresh coriander
  • 1 small onion or shallot, approximately 60 g

How to Make Healthy Avocado Bread

Step 1: Prepare the oven and loaf tin

Preheat the oven to 180°C using conventional heat or 160°C if your oven has a fan.

Line the loaf tin with baking paper, leaving a little paper above the sides. This creates handles that make the baked bread easy to lift out. Lightly brush any uncovered parts of the tin with olive oil.

Do not skip preheating. Almond-flour mixtures need to enter a properly heated oven so the eggs begin setting immediately.

Step 2: Check the avocado

Cut the avocado in half, remove the stone, and scoop approximately 150 g of flesh into the food processor.

A perfectly ripe avocado should yield when pressed gently but should not feel hollow or extremely soft. Remove any dark or stringy areas because they can give the bread a bitter flavour.

Step 3: Make the avocado base

Add the peeled garlic, olive oil, lemon zest, 15 ml lemon juice, salt, parsley, and optional black pepper to the avocado.

Blend until the mixture becomes smooth and evenly green. Stop once or twice to scrape down the sides of the bowl.

Using both zest and juice is one of my favourite tricks. The zest provides a strong lemon aroma without adding too much liquid, while the juice brightens the flavour and helps slow avocado browning.

Step 4: Add the eggs

Add the eggs to the avocado mixture. Blend for only 10–15 seconds, until combined.

Avoid blending the eggs for too long. Excessive mixing incorporates unnecessary air, which can make the bread rise rapidly and then collapse.

If your blender is small, transfer the avocado mixture to a bowl before adding the eggs and whisk them in by hand.

Step 5: Add the dry ingredients

In a separate bowl, combine the almond flour, baking powder, and sesame seeds. Break up any lumps with a fork.

Pour the avocado mixture over the dry ingredients. Fold everything together with a spatula until no dry almond flour remains.

The finished batter should be thick and spoonable rather than runny. If it appears unusually wet, leave it for three minutes. Almond flour gradually absorbs moisture.

Step 6: Fill the tin

Transfer the batter to the prepared loaf tin. Smooth the surface with the back of a damp spoon or a silicone spatula.

Sprinkle a few extra sesame seeds over the top. Gently press them into the surface so they remain attached after baking.

Tap the tin softly against the worktop once or twice to remove large air pockets.

Step 7: Bake

Place the tin on the centre shelf and bake for 25–35 minutes.

Begin checking after 25 minutes. The loaf is ready when:

  • The surface is lightly golden.
  • The centre feels firm rather than wet.
  • A skewer inserted in the middle comes out without raw batter.
  • The internal temperature is approximately 94–96°C, if you have a kitchen thermometer.

If the top browns before the middle has set, cover it loosely with foil or baking paper and continue baking.

Almond flour does not behave like wheat flour, so the loaf may remain slightly moist. A few soft crumbs on the skewer are acceptable; wet batter is not.

Step 8: Cool correctly

Let the bread rest in its tin for 10 minutes. Lift it out using the baking paper and place it on a wire rack.

Allow it to cool for at least another 15 minutes before slicing. The loaf continues to set as it cools. Cutting it immediately can compress the centre and make it appear underbaked.

For especially clean slices, cool the loaf completely and use a sharp serrated knife.

How to Make the Avocado Spread

Step 1: Prepare the onion

Finely chop the onion or shallot. If its flavour is very sharp, place it in a small bowl with 10 ml lemon juice and a pinch of salt. Leave it for five minutes.

This quick treatment softens the raw-onion flavour without removing its crunch.

Step 2: Prepare the tomato

Cut the tomato into quarters and remove the watery seeds. Dice the firm flesh into small pieces.

Removing the seeds is important. Too much tomato juice will make the spread thin and can turn the bread soggy.

Step 3: Prepare the chilli and coriander

Finely chop the chilli. For gentle heat, remove the seeds and pale inner membrane. Keep them for a hotter spread.

Chop the coriander leaves and tender stems. The stems contain plenty of flavour, so there is no need to discard them.

Wash your hands after handling the chilli and avoid touching your eyes.

Step 4: Mash the avocado

Place approximately 150 g avocado flesh in a bowl. Add 10–15 ml lemon juice, salt, and pepper.

Mash with a fork until creamy but still slightly textured. I prefer not to blend this spread: small pieces of avocado give it a fresher, more interesting texture.

Step 5: Finish the spread

Fold in the onion, tomato, chilli, and coriander. Taste and adjust the salt, lemon juice, or chilli.

Serve immediately, or press reusable food wrap directly against the surface and refrigerate briefly. Limiting contact with air helps preserve the green colour.

Serving Suggestions

Slice the bread into eight portions. Serve each portion with avocado spread and, if desired:

  • A poached or boiled egg
  • Sliced cucumber or radishes
  • Fresh rocket leaves
  • Crumbled feta
  • Smoked salmon
  • Plain Greek yoghurt with lemon and herbs

For a crisp surface, toast the slices in a dry frying pan over medium heat for one or two minutes per side. Handle them gently because almond-flour bread is more delicate than wheat bread.

Chef’s Best Tips

  1. Weigh the avocado flesh. Avocados vary greatly in size. Approximately 150 g gives the loaf the most reliable texture.
  2. Use finely ground almond flour. Coarse almond meal produces a heavier, more crumbly result.
  3. Do not use an entire lemon’s juice in the batter. It can make the mixture too wet. Use the zest of one lemon and measure 15 ml juice.
  4. Add baking powder for a lighter texture. The recipe works without it, but the loaf will be denser and flatter.
  5. Avoid overmixing. Fold only until the flour disappears. Excessive mixing may produce a compact loaf.
  6. Let the bread cool before slicing. This is the most important secret when baking with almond flour.
