Zucchini, Oat & Cheese Bake

Ingredients

  • 1 medium zucchini
  • to taste salt
  • 1/4 cup oat flakes ground into oat flour
  • 1 cup shredded cheese
  • to taste black pepper

Instructions
 

  • Grate the zucchini into a bowl, add a little salt, mix and leave for 10 minutes.
  • Squeeze out the excess liquid from the zucchini very well and place it in a clean mixing bowl.
  • Grind the oat flakes in a blender or coffee grinder until they become oat flour.
  • Add the ground oats, shredded cheese and eggs to the zucchini, then season with black pepper and a little extra salt if needed.
  • Mix everything well until the mixture is smooth and evenly combined.
  • Lightly grease a baking dish or line it with parchment paper.
  • Transfer the mixture to the dish and spread it evenly with a spoon.
  • Bake in a preheated oven at 360°F / 180°C for about 20 minutes, until set and lightly golden on top.
  • Let the bake cool slightly before slicing into portions.
