Grate the zucchini into a bowl, add a little salt, mix and leave for 10 minutes.
Squeeze out the excess liquid from the zucchini very well and place it in a clean mixing bowl.
Grind the oat flakes in a blender or coffee grinder until they become oat flour.
Add the ground oats, shredded cheese and eggs to the zucchini, then season with black pepper and a little extra salt if needed.
Mix everything well until the mixture is smooth and evenly combined.
Lightly grease a baking dish or line it with parchment paper.
Transfer the mixture to the dish and spread it evenly with a spoon.
Bake in a preheated oven at 360°F / 180°C for about 20 minutes, until set and lightly golden on top.
Let the bake cool slightly before slicing into portions.
