Savoury garden chicken bake

Ingredients

  • 1 medium courgette, finely grated
  • 1 medium potato, peeled and finely grated
  • 1 medium onion, peeled and finely grated
  • 1 medium carrot, peeled and finely grated
  • 400 g chicken breast, diced
  • 2 eggs
  • 3 tbsp flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • Mixed spices or dried herbs to taste
  • 2–3 cloves garlic, finely chopped
  • 1 tbsp olive oil for greasing
  • 20 g breadcrumbs for the base
  • 2 medium tomatoes, sliced
  • 60 g hard cheese, grated

Instructions
 

  • Preheat the oven to 180∘C.
  • Grate the courgette, potato, onion and carrot on the fine side of a grater and place them in a large bowl.
  • Dice the chicken breast into small cubes and add to the bowl with the vegetables.
  • Add eggs, flour, salt, pepper, paprika, mixed spices and chopped garlic, then mix until well combined.
  • Grease a medium baking dish with olive oil and sprinkle breadcrumbs over the base in a thin layer.
  • Spread the vegetable and chicken mixture evenly in the prepared dish.
  • Arrange sliced tomatoes on top of the mixture in a single layer.
  • Bake for 30 minutes at 180∘C.
  • Remove the dish, sprinkle grated cheese over the top and return to the oven for another 10 minutes until the cheese is melted and golden.
  • Let the bake rest for 10 minutes, then cut into portions and serve hot.
