No-Bake Blueberry Banana Protein Yogurt Cake
Creamy High-Protein Blueberry Banana Yogurt “Jelly” (No Eggs, No Added Sugar)
Blend the yogurt, bananas, blueberries, and lemon juice until completely smooth.
In a small bowl, sprinkle the gelatin over 3 tablespoons cold water. Let it sit for 5 minutes to bloom.
Microwave the bloomed gelatin for 5–10 seconds until fully dissolved (do not boil).
Stir the melted gelatin into the blended mixture until well combined.
Pour into a mold or dish and refrigerate for at least 4 hours, or until fully set.
Optional topping:
Simmer ½–1 cup blueberries with 1–2 tablespoons water for a few minutes until soft. Sweeten to taste if desired. Let cool and spoon over before serving.
