Herbed Red Lentil Air Fryer Loaf

Ingredients

For The Red Lentil

  • 1 cup red lentils soaked overnight
  • 2 eggs
  • 1/2  cup yogurt
  • 1/2  tea glass olive oil Extra Virgin
  • 10 g baking powder 
  • to taste salt
  • to taste fresh parsley finely chopped
  • to taste fresh dill finely chopped
  • to taste curd cheese crumbled or diced

For The Topping

  • to taste sesame seeds
  • to taste pumpkin seeds

Instructions
 

  • Soak the red lentils in plenty of water overnight
  • Drain and rinse the lentils, then let them drain well in a sieve
  • Line an air fryer pan with baking paper or lightly grease it
  • Place the drained lentils in a blender with the eggs, yogurt, olive oil, baking powder and salt
  • Blend until you have a smooth, thick batter with no visible lentils
  • Finely chop the parsley and dill and crumble or dice the curd cheese
  • Fold the herbs and curd cheese into the batter until evenly distributed
  • Pour the mixture into the prepared pan and smooth the top
  • Sprinkle sesame and pumpkin seeds generously over the surface
  • Bake in the air fryer at 180°C (360°F) for about 30–35 minutes, or 5–10 minutes longer in the oven, until golden and set, then cool before slicing
