Healthy Blueberry Chickpea Bake

This is the kind of recipe I would give to someone who says, “I want to bake something healthy, but I have very little experience.” It is forgiving, quick, and made with ingredients that are easy to find.

Ingredients

  • 120 g canned chickpeas drained and rinsed
  • 1 banana
  • 1 egg
  • 1/2 tbsp baking powder
  • Blueberries for topping

Instructions
 

  • Preheat oven to 350°F (180°C).
  • Line a small baking dish or loaf pan with parchment paper.
  • Add chickpeas, banana, and egg to a blender.
  • Blend until completely smooth.
  • Add baking powder and blend briefly again.
  • Pour batter into the prepared pan.
  • Sprinkle blueberries on top.
  • Bake for about 30 minutes, or until the top is set and a toothpick comes out mostly clean.
  • Cool slightly before slicing.
  • Chill before serving for the best texture.

Notes

Rinse the chickpeas very well and use a ripe banana for the best flavor.
