Healthy Blueberry Chickpea Bake
This is the kind of recipe I would give to someone who says, “I want to bake something healthy, but I have very little experience.” It is forgiving, quick, and made with ingredients that are easy to find.

Ingredients

canned chickpeas
drained and rinsed

banana

egg

tbsp
baking powder
Blueberries
for topping
Instructions
Preheat oven to 350°F (180°C).
Line a small baking dish or loaf pan with parchment paper.
Add chickpeas, banana, and egg to a blender.
Blend until completely smooth.
Add baking powder and blend briefly again.
Pour batter into the prepared pan.
Sprinkle blueberries on top.
Bake for about 30 minutes, or until the top is set and a toothpick comes out mostly clean.
Cool slightly before slicing.
Chill before serving for the best texture.
Notes
Rinse the chickpeas very well and use a ripe banana for the best flavor.
