Healthy Baked Berry Cottage Cheese Cake

A soft, lightly creamy, low-sugar baked treat made with almond flour, cottage cheese, eggs, and berries. Perfect for breakfast, snack, or dessert.

Ingredients

  • 2 large eggs
  • 3/4 cup almond flour
  • 1/2 cup cottage cheese
  • 2 tbsp sweetener
  • 2 tbsp melted butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup mixed berries

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 4x6-inch baking dish.
  • Add eggs, almond flour, cottage cheese, sweetener, melted butter, baking powder, and vanilla to a blender. Blend until smooth.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Top with mixed berries.
  • Bake for 25–30 minutes, or until lightly golden and set in the center.
  • Cool for 10–15 minutes before slicing and serving.

Notes

  • Use full-fat cottage cheese for the best texture.
  • Do not overbake, or the cake may become dry.
  • Frozen berries can be used straight from the freezer.
