Healthy Baked Berry Cottage Cheese Cake
A soft, lightly creamy, low-sugar baked treat made with almond flour, cottage cheese, eggs, and berries. Perfect for breakfast, snack, or dessert.
- 2 large eggs
- 3/4 cup almond flour
- 1/2 cup cottage cheese
- 2 tbsp sweetener
- 2 tbsp melted butter
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup mixed berries
Preheat oven to 350°F (175°C) and grease a 4x6-inch baking dish.
Add eggs, almond flour, cottage cheese, sweetener, melted butter, baking powder, and vanilla to a blender. Blend until smooth.
Pour the batter into the prepared baking dish and spread evenly.
Top with mixed berries.
Bake for 25–30 minutes, or until lightly golden and set in the center.
Cool for 10–15 minutes before slicing and serving.
