Golden Oat Walnut Air Fryer Cake

Ingredients

  • 1 cup rolled oats (approx. 90 g / 3.2 oz)
  • 1 cup milk, dairy or plant‑based (240 ml / 8 fl oz), heated
  • 2 eggs
  • 1 tbsp olive oil (15 ml)
  • 1 tbsp honey (20 g / 0.7 oz)
  • 1 tsp baking powder (5 g)
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • Small handful walnuts (20–25 g / 0.9 oz), roughly chopped
  • 1 tsp poppy seeds (optional, for topping)

Instructions
 

  • Soak oats: Warm the milk and pour over the rolled oats, then leave to soften for a few minutes.
  • Whisk liquids: Beat eggs with honey and olive oil until smooth and slightly frothy.
  • Combine base: Mix the egg mixture into the softened oats until evenly combined.
  • Add flavourings: Stir in baking powder, ground cinnamon and vanilla extract.
  • Fold in nuts: Add the chopped walnuts and fold gently through the batter.
  • Prepare basket: Line the air fryer basket with parchment paper and lightly grease with neutral oil.
  • Fill and top: Pour the batter into the basket, smooth the surface and sprinkle poppy seeds on top if using.
  • Bake: Cook in the air fryer at 170∘C (340°F) for about 12 minutes until set and lightly golden.
  • Cool: Let the cake cool briefly in the basket, then lift out and cool further on a rack or plate.
  • Serve: Cut into four portions and enjoy plain or with honey, yoghurt or fruit.
