Finely shred half a head of cabbage and place it in a deep mixing bowl, then grate two carrots on the large side of a grater and add them to the cabbage.
Crack two eggs into the bowl, season with salt, turmeric, black pepper and your favourite vegetable spices, and mix thoroughly until the vegetables are coated and the spices are evenly distributed.
Add 500 g of mince and 100 g of breadcrumbs to the bowl, then combine everything until you have a uniform mixture that holds together when pressed.
Line a baking tray with parchment paper, spoon one tablespoon of oil onto the paper and spread it evenly with a brush or spoon.
Transfer the vegetable and mince mixture to the tray, spread it across the surface and smooth the top so the thickness is even.
Preheat the oven to 220∘C , place the tray on the middle rack and bake for about 30 minutes until the bake is set and lightly golden.
While the base cooks, grate about 150 g of cheese on the large side of a grater and keep it ready in a bowl.
Remove the tray from the oven after 30 minutes, sprinkle the grated cheese evenly over the top and return the tray to the oven.
Bake for a further 15 minutes until the cheese has melted, bubbled and turned a golden brown crust over the surface.
Let the bake rest for a few minutes, then cut it into portion‑sized pieces and serve warm, or cool completely and store in the fridge to enjoy cold later.
