Preheat the oven to 180°C / 355°F and line or grease a loaf tin.
Beat the eggs in a large bowl until well combined and slightly foamy.
Add the tahini, olive oil, baking powder and salt, then mix until smooth.
Stir in the maple syrup if you want a slightly sweet loaf.
Pour the mixture into the prepared loaf tin and smooth the top.
Sprinkle mixed nuts on top if using.
Bake for 35–40 minutes, until the loaf is set and lightly golden and a skewer comes out clean.
Cool in the tin for 10–15 minutes, then transfer to a rack and slice once warm or cooled.
