Fluffy Protein Loaf

Ingredients

For The Loaf

  • 120 g tahini
  • 5 eggs
  • 1 tbsp olive oil Extra Virgin
  • 1 tsp baking powder
  • 1/2 tsp salt
  • to taste maple syrup optional

For The Topping (optional)

  • to taste mixed nuts for sprinkling on top

Instructions
 

  • Preheat the oven to 180°C / 355°F and line or grease a loaf tin.
  • Beat the eggs in a large bowl until well combined and slightly foamy.
  • Add the tahini, olive oil, baking powder and salt, then mix until smooth.
  • Stir in the maple syrup if you want a slightly sweet loaf.
  • Pour the mixture into the prepared loaf tin and smooth the top.
  • Sprinkle mixed nuts on top if using.
  • Bake for 35–40 minutes, until the loaf is set and lightly golden and a skewer comes out clean.
  • Cool in the tin for 10–15 minutes, then transfer to a rack and slice once warm or cooled.
