Elegant Layered Aubergine Bake With Tomato

Ingredients

Aubergine Layers

  • 3 aubergines sliced lengthways into 1 cm thick strips
  • to taste salt for seasoning the aubergine slices
  • to taste mixed dried herbs for aromatic flavour
  • to taste favourite spices for gentle warmth
  • to taste olive oil Extra Virgin, for drizzling over the aubergine slices before roasting

Tomato–Onion Sauce

  • 2 onions sliced into rings
  • to taste olive oil Extra Virgin, for frying the onions.
  • 3 tomatoes grated
  • to taste salt for the sauce
  • to taste sugar to balance tomato acidity
  • to taste ground black pepper
  • to taste dried garlic
  • to taste dried basil
  • to taste dried oregano

Assembly And Topping

  • to taste grated cheese for layering and topping
  • to taste olive oil Extra Virgin, for greasing the glass baking dish if needed

Instructions
 

  • Slice three aubergines lengthways into 1 cm thick strips and arrange them in a single layer on a parchment lined baking tray.
  • Season the aubergine slices with salt, dried herbs and spices, then drizzle with olive oil and spread it evenly.
  • Roast the aubergines at 200∘C for about 30 minutes until soft and lightly browned.
  • Slice two onions into rings and fry them in olive oil over medium heat until golden and tender.
  • Add grated tomatoes to the onions and season with salt, sugar, black pepper, dried garlic, dried basil and dried oregano.
  • Simmer the tomato–onion sauce for about 20 minutes until it thickens and the flavours meld.
  • Lightly grease a heatproof glass baking dish and grate the cheese, keeping it ready for layering.
  • Place a layer of roasted aubergines in the dish, spoon tomato–onion sauce over them and sprinkle grated cheese on top.
  • Repeat the layering with aubergines, sauce and cheese, finishing with a generous cheese layer on the surface.
  • Bake at 200∘C for about 15 minutes until the cheese is melted and golden, then rest briefly, slice and serve warm.
