Easy Carrot Walnut Cake (Oat Flour)

This carrot walnut cake is one of those recipes I often recommend to beginner bakers. It is simple, forgiving, and made with wholesome ingredients that naturally create a soft, moist cake.

  • Plain yogurt
  • Chopped walnuts

Instructions
 

  • Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
  • Grate the carrots and apple.
  • In a large bowl whisk the eggs until smooth.
  • Add grated carrots, grated apple, and cinnamon. Mix well.
  • Stir in oat flour and baking powder until combined.
  • Fold in the chopped walnuts.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
  • Cool slightly, spread yogurt on top, and sprinkle with chopped walnuts.
