Easy Carrot Walnut Cake (Oat Flour)
This carrot walnut cake is one of those recipes I often recommend to beginner bakers. It is simple, forgiving, and made with wholesome ingredients that naturally create a soft, moist cake.
For the topping
- Plain yogurt
- Chopped walnuts
Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
Grate the carrots and apple.
In a large bowl whisk the eggs until smooth.
Add grated carrots, grated apple, and cinnamon. Mix well.
Stir in oat flour and baking powder until combined.
Fold in the chopped walnuts.
Pour the batter into the prepared pan and spread evenly.
Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
Cool slightly, spread yogurt on top, and sprinkle with chopped walnuts.
