Crunchy & Fresh Cabbage Salad
A crisp, refreshing cabbage salad with carrot, cucumber, apple, red onion, and a bright lemon Dijon dressing. Light, colourful, and perfect as a side dish for everyday meals.

white cabbage

Dijon mustard
Instructions
Thinly slice the cold cabbage and place it in a large bowl.
Grate the carrot and add it to the cabbage.
Chop the cucumber into small bite-sized pieces.
Dice the apple and toss it with a few drops of lemon juice to prevent browning.
Thinly slice the red onion. For a milder flavour, soak it in cold water for 5 minutes, then drain.
In a small bowl, whisk together lemon juice, olive oil, honey, and Dijon mustard.
Add all vegetables and apple to a large bowl. Pour over the dressing.
Toss gently until evenly coated.
Season with sea salt to taste.
Chill for 15–20 minutes before serving. Garnish with fresh dill or parsley if desired.
Notes
For the best crunch, use cold cabbage and do not overdress the salad. If making ahead, keep the dressing separate and mix shortly before serving.
