Chocolate Date Oat Cake

- 10 dates, pitted
- 3 eggs
- 1 cup (240 ml) milk
- 1 cup (90 g) oat flour
- 1 tsp baking powder
- 2–3 tbsp unsweetened cocoa powder
- Butter or oil for greasing the baking dish
Preheat the oven to 175∘C (350°F).
Place pitted dates and milk in a blender and leave for 5–10 minutes to soften.
Blend until completely smooth.
Add eggs to the blender and blend briefly until combined.
In a bowl, mix oat flour, baking powder and cocoa powder.
Pour the blended mixture into the dry ingredients and stir until a smooth batter forms.
Grease a baking dish or cake tin and, if desired, line the base with parchment.
Pour the batter into the prepared dish and level the surface.
Bake for 30–35 minutes until set and a toothpick inserted into the centre comes out clean.
Cool, slice into 8 portions and serve.
