Blueberry & Vanilla Baked

Ingredients

  • 1 cup (80 g) rolled oats
  • 2 eggs
  • ¼ cup (4 tablespoons) vanilla yoghurt
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 100 g (3.5 oz) blueberries, fresh or frozen
  • oil spray, butter or margarine, for greasing

Instructions
 

  • Preheat the oven to 400°F (200°C), 360°F (180°C fan), or preheat the air fryer to 360°F (180°C).1 tablespoon maple syrup
  • Grease a small baking dish with oil spray, butter or margarine, coating the base and sides.
  • Add rolled oats to the dish, then crack in the eggs and start mixing gently.
  • Add vanilla yoghurt, maple syrup, baking powder and vanilla extract to the oats and eggs.
  • Mix everything thoroughly in the dish until the oats are fully coated and the batter looks even.
  • Stir in the blueberries gently so they are distributed throughout the mixture.
  • Place the baking dish into the preheated oven or air fryer.
  • Bake for 20–25 minutes until the top is golden, puffed and the centre is set.
  • Remove from the heat and let the bake cool slightly.
  • Serve warm with extra yoghurt or custard, if desired.
