Blueberry Banana Protein Yogurt Cake (No-Bake)

Ingredients

Main Base

  • 150 g blueberries for natural sweetness and colour
  • 250 g greek Yoghurt for creaminess, protein and a smooth texture
  • 1 scoop whey protein (vanilla) to enhance structure and add gentle sweetness
  • 1–2 tbsp honey or agave syrup for balanced sweetness without overpowering the berries
  • 1 tsp vanilla extract for a soft, fragrant finish

Texture Enhancers

  • 3–4 cubes ice cubes to help create a cloud‑like, airy consistency.
  • 2–3 tbsp cold water if needed to adjust thickness.

Optional Toppings

  • to taste fresh blueberries
  • to taste coconut flakes
  • to taste lemon zest

Instructions
 

  • Wash the blueberries thoroughly and pat them dry so excess water does not dilute the mixture. This ensures the flavour stays bright and concentrated.
  • Place the Greek yoghurt, blueberries, whey protein, honey and vanilla extract into the blender. This combination forms the creamy, protein‑rich foundation.
  • Drop in the ice cubes, which help whip air into the mixture and create the signature cloud effect.
  • Blend on high speed until the mixture becomes smooth, pale and slightly fluffy. Scrape down the sides if needed.
  • If the mixture feels too thick, add a splash of cold water and blend again until it reaches a soft, mousse‑like consistency.
  • Taste the mixture and adjust honey or agave syrup to match your preferred sweetness level.
  • Transfer the mixture into serving glasses and refrigerate for at least one hour to allow the flavours to settle and the texture to firm slightly.
  • Slice fresh blueberries, zest a little lemon or prepare coconut flakes to add brightness and contrast.
  • Top each portion with your chosen garnish, keeping the decoration light to preserve the airy feel.
  • Serve chilled, allowing the cloud‑like texture to shine with every spoonful.
