Banana Oatmeal Bake with Blueberries

Ingredients

  • 3 medium ripe bananas
  • 3 cups rolled oats
  • 1 egg
  • 2  tbsp sunflower oil plus 1–2 tsp extra for greasing
  • to taste honey
  • 1 tsp ground cinnamon
  • 1 1/2 cups milk
  • 1/4 cup blueberries

Instructions
 

  • Check that your air fryer basket is solid or line it with parchment if it has holes
  • Grease the 9 × 9 inch air fryer basket with 1–2 teaspoons of sunflower oil, including the corners
  • Mash the bananas directly in the basket with a fork until mostly smooth
  • Add the egg, milk, sunflower oil and a drizzle of honey and mix gently in the basket
  • Sprinkle in the cinnamon and stir so it is evenly distributed
  • Add the rolled oats and mix until everything is evenly combined with no dry patches
  • Smooth the mixture into an even layer across the basket
  • Scatter the blueberries over the top and gently press them in slightly without mixing them through
  • Air fry at 340°F for 30 minutes until the top is set and lightly golden
  • Let the bake rest in the basket for 10–15 minutes before slicing and serving
