Avocado Banana Pancakes

Ingredients

  • 90 g self-rising flou
  • 1 tsp baking powder
  • ½ avocado ripe
  • ½ banana ripe
  • 60 g Greek yogurt
  • 60 ml milk
  • 1 egg room temperature
  • to taste a little oil or butter for the pan

Instructions
 

  • In a large bowl, mash the avocado and banana together.
  • Add to the bowl: flour, baking powder, Greek yogurt, milk, egg. Mix gently until everything is combined.
  • Check consistency. The batter should be thick but spoonable.
  • Place a nonstick skillet over low to medium heat and add a small amount of oil or butter.
  • Spoon small portions of batter into the pan.
  • Cook the second side until golden brown and fully cooked through.
  • Serve immediately while warm.
