Apple Yogurt Cake

This is the kind of cake every home cook should have in their repertoire. Soft, naturally moist, delicately sweet, and filled with tender — it’s the perfect balance between simplicity and elegance.

Ingredients

  • 4 apples  medium, peeled if desired
  • 4 eggs room temperature
  • 1 cup  Greek yogurt
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 50  cane sugar optional, depending on sweetness of apples

Instructions
 

  • Prepare the apples

    Peel the apples if the skin is thick, then cut into small, even cubes.
  • Prepare the batter

    In a blender or bowl, combine:
    eggsGreek yogurtvanilla extractcinnamonsugar (if using)
  • Combine apples and batter

    Add the diced apples into the batter and gently mix.
  • Prepare the baking pan

    Line a baking pan with parchment paper or grease it well.
  • Pour and level

    Pour the mixture into the pan and spread evenly.
  • Bake slowly and evenly

    Bake at:
    350°F (175°C) 40 minutes
  • Cool inside the oven

    Turn off the oven and leave the cake inside with the door slightly open for 15–20 minutes.
  • Chill for best texture

    After cooling, refrigerate for a few hours before serving.
  • Serve

    Slice into portions and serve chilled or slightly cool.
