Cut the broccoli into medium-sized florets.
Place the florets in a heatproof bowl, pour boiling water over them and let sit for 2 minutes, then drain well.
Spread the broccoli on a towel and pat dry thoroughly.
In a bowl, mix the Greek yogurt, flour, garlic, olive oil, paprika, turmeric if using, salt and black pepper until smooth.
Add the dried broccoli florets and toss until evenly coated.
Preheat the air fryer to 350°F (about 175–180°C).
Arrange the coated broccoli in the air fryer basket in a single layer.
Air fry at 350°F for about 12 minutes, shaking the basket or turning the florets halfway through, until golden and tender.
Transfer to a serving dish and taste, adding a little extra salt or pepper if needed.
Serve hot with lemon wedges and, if desired, a simple yogurt dip.
