Air Fryer Tomato, Egg & Mozzarella Bake

Ingredients

  • to taste olive oil, Extra Virgin for greasing
  • 2 tomatoes sliced
  • 3 eggs
  • to taste salt
  • to taste oregano
  • to taste black pepper
  • to taste ham chopped
  • to taste olives sliced
  • to taste green onion chopped
  • to taste mozzarella cheese shredded or sliced (enough to cover the top)

Instructions
 

  • Line the air fryer basket with parchment paper and lightly grease it with vegetable oil.
  • Slice the tomatoes and arrange them in an even layer on the bottom of the basket.
  • Air fry at 180°C / 350°F for 5 minutes to soften the tomatoes.
  • In a bowl, beat the eggs, then add salt, oregano, black pepper, chopped ham, sliced olives and chopped green onion and mix well.
  • Carefully pour the egg mixture over the tomatoes, spreading it evenly.
  • Air fry at 180°C / 350°F for about 10 minutes, or until the eggs are set.
  • Sprinkle or lay mozzarella cheese evenly over the top.
  • Air fry at 180°C / 350°F for another 3 minutes, until the cheese is melted and lightly golden.
  • Let the bake cool for 1–2 minutes, then slice and serve warm.
