Line the air fryer basket with parchment paper and lightly grease it with vegetable oil.
Slice the tomatoes and arrange them in an even layer on the bottom of the basket.
Air fry at 180°C / 350°F for 5 minutes to soften the tomatoes.
In a bowl, beat the eggs, then add salt, oregano, black pepper, chopped ham, sliced olives and chopped green onion and mix well.
Carefully pour the egg mixture over the tomatoes, spreading it evenly.
Air fry at 180°C / 350°F for about 10 minutes, or until the eggs are set.
Sprinkle or lay mozzarella cheese evenly over the top.
Air fry at 180°C / 350°F for another 3 minutes, until the cheese is melted and lightly golden.
Let the bake cool for 1–2 minutes, then slice and serve warm.
