Air Fryer Chicken with Tomato Sauce & Mozzarella

Ingredients

chicken breast

eggs
to taste
salt
to taste
black pepper
as needed
breadcrumbs

tomato paste
to taste
fresh parsley, chopped
as needed
mozzarella, shredded or finely chopped
Instructions
Line air fryer with parchment.
Beat eggs with salt and pepper.
Butterfly and flatten chicken.
Season, dip in egg, coat in breadcrumbs.
Air fry 15 min at 180°C / 350°F.
Mix tomato paste + parsley.
Spread on chicken, add mozzarella.
Air fry 5 min more.
